Chef Hyde's Experience & Creativity ...are expressed in every course. His diverse career spans a range of culinary influences on two continents, Europe and North America, and includes several well known hotels and resorts. Chef Peter Hyde was born to 2 American artists living and working in Rome, Italy. This could be one reason he strives for artistic plates that taste delicious! Another reason could be that cooking simply runs in the family. Growing up, Peter’s mother was always baking something fresh every day – bread, cookies, cakes, biscuits, and muffins. Chef Hyde’s style has evolved over 20+ years, from when he first began as a Line Cook at a local pub-style restaurant in Rhode Island while working his way through art school and then the culinary program at Rhode Island School of Design to working at several large hotels and resorts such as the DoubleTree Guest Suites in Boston/Cambridge and Ocean Edge Resort on Cape Cod. At these high-end dining locations, Peter was the Executive Chef and ran multiple outlets including the restaurants, banquets, suite service, and the famous Sculler’s Jazz Club, where his food spoke volumes and became well known for the jazz-dinner packages they still offer today. In the nineties, Peter had the opportunity to work in Bern, Switzerland at one of the country’s premier 5-star hotels, The Hotel Bellevue Palace. Peter and his wife, Lisa, lived in Bern for a year and traveled extensively around Switzerland as well as France, Italy and Germany, hungrily sampling all of these countries’ regional cuisines.
Now it’s time to turn a Chef’s dream into reality and offer a neighborhood bistro that allows Peter to use his classical French training to inspire creative Mediterranean dishes that use the season’s freshest ingredients and locally grown produce that anyone can enjoy in a relaxed fine dining atmosphere.
